It is said that one misty morning of the 24th of December in the lands of Póvoa de Varzim, a woman left her simple single-storey house with her son tied to her back in a blanket. She walked across the dunes to the field of perfectly aligned kales and determined where the harvest would begin. The plants had thrived in the cold climate, swept by salty winds from the Atlantic, and now showed off lush green leaves on pearlwhite stems. Located in the sand dunes around Póvoa de Varzim and Esposende, near Porto, these fields are known as masseiras and their creation dates back to the 18th century. This farming system, which is unique in the world and given heritage protection by the municipality, was invented and developed by the monks of the Monastery of Tibães. It was in these fields that Póvoa flat leaf kale was born, becoming popular throughout the country. Returning to the morning of our story, the fate of that Póvoa Kale was a most noble one: to delight the family palate on the night of Christmas Eve.
